Ingredients for 4 people:
- 500 g green asparagus
- 50 g hazelnuts
- 2 balls of burrata
For the dressing:
- 200 ml olive oil
- 150 g Parmesan cheese
- 1 clove of garlic
- 1 red chili
- 1 lemon
- 1 orange
- 10 basil leaves
- Pepper and salt
Recipe:
- Light the fire in the Jackie with the plancha on top instead of the cover plate.
- Chop the hazelnuts and toast them on the plancha.
- Finely chop the chili, garlic, and basil. Grate the Parmesan cheese and the zest of the orange and lemon. Mix everything in a bowl.
- Squeeze the lemon and orange and pour the juice into the bowl along with the olive oil.
- Remove the bottom part of the asparagus.
- Oil the plancha, wipe away the excess oil, and place the green asparagus on it. After 5 minutes, turn the asparagus over and move them to a cooler zone if they are already well-colored, allowing them to cook gently.
- Arrange the asparagus on the plates and drizzle with the dressing. Add the burrata, sprinkle with hazelnuts, and season with pepper and salt to taste.
